Baileys Coffee Christmas Fruit Cake
A Christmas cake with a difference!
Mixed fruit is soaked in Baileys and fresh coffee, which gives a lovely richness and creaminess to the cake. It is then made into a rich, very moist, and flavoursome cake, using eggs from our own rescue ducks and chickens, who are free to roam. Whole glace cherries are added to the cake to create a splash of colour ( these can always be left out if you are not a fan of cherries! ). Baked in the Farmhouse Aga, one cake at a time, to ensure even cooking and then brushed with more Baileys as it comes out of the oven and is still warm. This cake really smells wonderful!
It measures 20cm in diameter and will serve 12-14 people, depending on the thickness of the slice.
The cake is finished with a red and green ribbon ( please ask if you would like me to omit this ) and will be delivered in a window cake box, so it will make a lovely gift.

Mixed Fruit (SULPHITES), WHEAT Flour, Butter (MILK), Brown Sugar, EGGS, Almond milk ( NUTS), Glace Cherries (SULPHITES), Baking Powder, Oat Milk, Baileys Irish Liqueur( MILK), Coffee, Cinnamon, Allspice, Nutmeg, Vanilla extract.
