Ginger Cake with Ginger Icing and Crystallised Ginger

Whole Ginger Cake with Ginger Icing and Crystallised Ginger, homemade in the Farmhouse Aga.
 
This is a cake for serious ginger lovers!

It is a wonderfully moist cake, with added pieces of stem ginger to give a bit of crunch, and I have also added a few sultanas to give a bit of added texture. It has a ginger and lemon flavoured drizzled icing on top, and it is topped with small pieces of crystallised ginger. It measures 8 inches ( 20cm) in diameter and is just over 2 inches ( 5 cm) in height.

The cake is handmade to order, so if you do not like sultanas just let me know and I will leave them out. The cake is very much home made - there may be a crack in the top, a skewer hole where I have tested whether the cake is done, and it will look very much a handmade cake. But that is the beauty of it - completely unique and made to order!

The cake is cooked in a liner which will remain on the cake, as it will give a degree of protection when in the postal system. It will be wrapped in a gold star gift box, tied with ribbon, and a "handmade" tag attached.
