Whole Lighter Fruit Cake - a sweet, light, and moist boiled fruit cake, baked to order on the Farmhouse Aga.

 

Whole, sweet and moist cake cooked with a magic ingredient! This cake is a lighter version of my traditional fruit cake, a slightly plainer tasting cake as it does not have added spices. It is a really moist and flavoursome cake, cooked using a tin of crushed pineapple to give a really sweet taste. And the eggs we use are from our rescue ducks and chickens, who are free to roam and have a very happy life!

The recipe also has cherries and walnuts to add colour and crunch, but as the cake is made to order, I can easily leave these out if you do not iike them.

The cake measures 20 cm in diameter ( 8 Inches ) and is around 6 cm in height. It weighs around 1.5 kg and will cut into 10-12 portions.

The cake is totally handmade to order - so there may be a crack in the cake, a skewer hole where I have tested whether the cake is done, and it will not resemble a mass produced cake at all!

It will be cooked in a liner which will remain on the cake for transport, wrapped in clingfilm, and sent in a gold star cake box with ribbon, and then wrapped in tissue paper.

It really does make a lovely gift!
