I hand make your Dundee cake to order and it is slowly baked in the Farmhouse Aga, using quality ingredients, our own Chiltern Pantry marmalade, and it is a completely dairy free Vegan cake. The cake is baked in a liner which will remain on the cake for transport, as it will give it a degree of protection when in the postal system.

This is a lovely traditional Dundee cake with a rich flavour, slightly less moist than a "normal" fruit cake, bursting with ground almonds, orange flavour and fruit, and of course with the signature almonds on top. It measures 20cm in diameter, 6 cm in height and weighs around 1.5kg. It will be wrapped in a star cake box with a gold ribbon, and will serve 10-12 people.

Please note this is a totally handmade cake - as such the almonds may not be exactly symmetrically placed on the cake, there may be a skewer hole where I have tested whether the cake is done, there may be a crack in the cake, and it will definitely look hand made. The individuality, however, is the beauty of the cake, not mass produced in a huge factory, and I can assure you the taste will be well worth the hand made imperfections!

Dundee cake should keep well in an airtight tin for 4 weeks.

And a bit of history for you - Dundee cake dates from the 1700's where it was first served in a shop in Dundee owned by Janet Keiller, and was later mass produced by the Keiller Marmalade Company. A popular story is that Mary Queen of Scots, who was fond of fruit cake, did not like cherries, so a cake was made for her using ground almonds instead of cherries - and hence Dundee cake was born! Many modern recipes ( mine included) now add glace cherries to give a splash of colour, but as this cake will be hand made to order, you can always ask me to leave out the cherries if you also do not like them!
